Today I’m sharing a family favourite – avocado pastries.  Make this dish your own by changing the fillings to suit your own taste, making it as elegant or as casual as you like.  


Avocado Pastries

Prep: 15 min | Cook: 20 min | Serves: 2 as a main dish, 4 as a side

Ingredients

  • 1 ripe avocado
  • 125 g shredded cheese (1 prefer sharp tasting)
  • 1 dessertspoon pine nuts
  • Salt and freshly ground black pepper to taste
  • 1 sheet frozen puff pastry, defrosted, cut into 2 large or 4 small triangles
  • Milk to glaze

To serve

  • Sweet chili sauce

Method

  • Preheat oven to 190° C
  • Mash avocado in small bowl
  • Mix in shredded cheese and pine nuts
  • Add freshly ground black pepper and salt to taste
  • Cover half of each  puff pastry triangle with mixture, leaving a margin of 1/2 inch around the filling
  • Brush margin with milk
  • Bring other side of triangle over to cover and pinch together, or crinp with a fork
  • Glaze triangles with milk
  • Bake for 15 – 20 minutes, or until pastry is golden
  • Serve hot, accompanied with sweet chili sauce, or other condiment of choice.
