Broccoli and cheese quiche

Use a frozen flan case and cut prep time down to 10 minutes.  Serve with a salad and garlic bread for an easy after-work dinner.

Prep: 10 mins | Cook: 40 mins | Serves: 4


1 frozen savoury flan case, defrosted
250g frozen broccoli florets, defrosted and cut into small pieces
200g mushrooms, thinly sliced
3 free range eggs
125 ml milk
Salt and freshly ground black pepper to taste
250g shredded cheddar cheese


Preheat oven to 170 ⁰C.
Arrange mushrooms and broccoli in flan case.
Whisk together eggs, milk, salt and pepper and gently pour over mushrooms and broccoli.
Sprinkle cheese over.
Bake until golden brown, 35 to 40 minutes
