Italian cabbage and bean soup flexitarian blog flexitarian recipe

An easy and substantial slow-cooked cabbage and bean soup, topped with Parmesan cheese to serve.

Healthy cabbage and bean soup

Prep time: 20 mins | Cooking time: 3-4 hrs | Servings: 6

Ingredients

1 cup onion, chopped
1/2 cup carrot, sliced
2 1/2 cups green cabbage, shredded
1 cup diced tomato with juice
400g can  white beans
750g  vegetable stock (or other stock of your choice)
1 teaspoon garlic paste
2 tablespoons tomato paste
1 tspn hot chili paste
black pepper, freshly ground

Optional

Grated or shaved parmesan cheese to serve

Method

Place all ingredients in slow cooker.
Stir and cook on High for 3-4 hours or on low for 5-6 hours.
Serve topped with Parmesan and garlic bread.
