Vegetarian Loaded Baked Potatoes

44 easy ways to feed a family!  Make your loaded potatoes as gourmet or family friendly as you like.  Or set up a vegetarian baked potato bar – set out your choice of fillings while the potatoes are baking and let everyone top their own potato.


Instructions

  • Heat oven to 190°C.
  • For each person, take 1 (or 2) large Sebago potatoes.
  • Scrub potatoes with a brush and pat dry with paper towels or a clean tea towel.
  • Pierce potatoes with a fork in 4-5 places.
  • Place  on oven rack in the centre of oven.
  • Bake for 50 to 60 minutes or until tender .
  • Cut a deep cross in top of each potato.  About half way into the potato – just scoring the top won’t work.
  • Using a clean tea towel to hold potato, squeeze base gently to open potato up.
  • Add your choice of topping and serve.

  • Broccoli in cheese sauce
  • Kidney beans, salsa, lettuce, chopped tomato, avocado, shredded tasty cheese and sour cream
  • Cream cheese with snipped shallots and your choice of chopped herbs
  • Chili beans, red onion and shredded cheese
  • Baked beans and grated cheese
  • Irish – with leeks, cabbage and grated cheddar, broiled to melt. Food Network
  • Coriander-Lime – with sour cream, fresh lime juice, coriander and salsa. Food Network
  • Three cheese and onion – BBC Good Food
