Moroccan chicken tagine

Free range chicken breast fillets, potatoes, tomatoes, olives, garlic, turmeric and seasonings are  simmered in a tagine until tender.  Serve with fresh crusty bread for a low-maintenance, easy weeknight meal.

Quick and easy to prepare with very little hands-on work once everything’s in the tagine.

Don’t have a tagine?

If you don’t have a tagine, no problem; just use a deep frying pan with a lid, or a flameproof casserole to get a very similar result.

Moroccan chicken tagine

Prep time: 10 mins | Cook time:  30 mins | Serves 2


  • 2 tablespoons olive oil
  • 1 large brown onion, sliced
  • 2 teaspoons garlic paste
  • 1 teaspoon turmeric
  • 2 free range chicken breast fillets
  • salt and freshly ground black pepper
  • 2 potatoes cut into bite sized pieces
  • 2 tomatoes, cut into wedges
  • ½ cup pitted black olives


  1. Heat the oil in a tagine over a low heat and gently fry the onion until it softens.
  2. Add garlic paste and stir through
  3. Mix through turmeric
  4. Place chicken breasts into the tagine and season with a little salt and pepper to taste.
  5. Cover and let the chicken brown on one side
  6. Turn chicken over and continue cooking until both sides are browned.
  7. Spread the potatoes evenly around the meat, add about 1/2 cup water and then cover again.
  8. Continue cooking over a low heat.
  9. When the potatoes are nearly cooked, sprinkle the tomato wedges over the top along with some more salt and pepper.
  10. Cover and cook until the vegetables are done.
  11. Top with olives
  12. Serve immediately with fresh, crusty bread or steamed rice.
