Prawn curry - flexitarian

As a kid, I loved prawn curry from the Chinese takeaway.  I still love it, but now I make it at home.

Ingredients

  • 60 g  olive oil
  • 500 g  raw deveined prawns
  • 1 large onion finely sliced
  • 2 tspns garlic paste or more to taste
  • 50 g curry powder
  • 250 ml  water
  • hot cooked rice to serve
  • 2 tbsp shallots sliced diagonally
  • 1 red chili finely chopped

Instructions

  1. Heat oil in large pan over high heat.
  2. Sauté onion until soft.
  3. Mix curry powder and garlic paste into water and add to sauteed onion.  Stir through.
  4. Reduce heat and  simmer, covered,  for approximately 10 minutes, stirring occasionally.

  5. Add prawns and more water if needed, simmer for around 10 minutes or until prawns turn pink and are cooked through.
  6. Garnish with shallots and chilli 

  7. Serve immediately with hot rice.
