Healthy and delicious, salt and pepper salmon  has four ingredients and only takes 30 mins from start to table ready.

And the wasabi mayonnaise is even easier.  Simply add wasabe paste, lime juice and coriander (cilantro) to your favourite mayo.

Serve with seasoned potato wedges with rosemary or rice, and a green salad for an elegant weeknight dinner.

So easy, yet so superb! 

Salt and pepper salmon with wasabe

Prep: 10 minutes | Cook: 20 minutes  | Serves: 4


Salt and pepper salmon

  • 2 teaspoons sea salt
  • 2 teaspoons cracked pepper
  • 60 ml vegetable oil
  • 4 (220 g) salmon fillets, skin on

Wasabi mayonnaise

  • 150 g mayonnaise
  • 2 teaspoons wasabi paste
  • 1 teaspoon coriander, finely chopped
  • 1 teaspoon lime juice


  1. Combine salt, pepper, half the oil and salmon in large bowl; cover, stand 5 minutes.
  2. Meanwhile, make wasabi mayonnaise, by combining mayonnaise, wasabi paste, coriander and lime juice in a small bowl.
  3. Heat remaining oil in large frying pan; cook fish, skin-side down, until skin crisps.
  4. Turn fish; cook, uncovered, until cooked as desired.
  5. Serve salmon with wasabi mayonnaise, and watercress and lime slices, if desired.
