Scalloped Potatoes

Pure comfort food. An easy-to-follow scalloped potatoes recipe with potatoes, cream, cheese and sliced onions, baked to perfection.

Add diced bacon if desired, or omit for a vegetarian version.


Prep time:  15 mins | Cook time: 60 min | Serves: 2

Ingredients

375 g potatoes
1 onion
salt, pepper
130 ml pouring cream
100 g shredded cheddar cheese

If using bacon:

2 rashers rindless bacon

Method

Preheat oven to 180 degrees C
Peel potatoes and slice very thinly
Peel and thinly slice onion
Layer potato and onion rings alternatively in an ovenproof dish, distributing bacon between layers if desired
Season layers lightly with salt and pepper
Pour cream over and sprinkle shredded cheese on top
Cover and bake for 1 hour or until potatoes are tender.

If using bacon:

Chop bacon finely and sprinkle occasionally over potato and onion rings in step 4 above.

NOTES:

  • Potatoes should be sliced around 1/8″ thick.  I recommend using a food processor or mandolin to get thin, even slices.
  • This recipe makes two large side servings.  Adjust quantities to suit your requirements; it won’t affect the cooking time.
