This aromatic and creamy green chicken curry recipe brings together the flavours of classic Thai cooking in 4 easy steps.

Easy slow cooker green chicken curry

Prep: 20 min | Cook: 3-6 hrs| Serves: 4

Ingredients

500 g free range chicken breast fillets, cubed

400 ml coconut milk

1-2 tblsp green curry paste

1 tablespoon brown sugar

2 teaspoons fish sauce

1/2 small brown onion, sliced finely

1/2 red or green capsicum, sliced finely

To serve:

Steamed rice

1/2 cup chopped coriander leaves

Finely sliced red chilis to taste

Method

Whisk coconut milk, green curry paste, sugar and fish sauce together in crockpot.

Add  chicken and cook on low for 2-3  hours or high for 1.5-2 hours.

Stir through capsicum and onion.

Cook for a further 2-3 hours on low, or 1.5-2 hours on high.

Serve over rice, garnished with coriander or basil leaves and finely sliced red chilis if desired.
