Slow cooker herbed potatoes

These delicious slow cooker herbed potatoes are addictive. They’re an easy side dish, healthier than roast potatoes,  with less mess and a much faster cleanup.

Only 10 minutes prep, then you don’t need to touch them until they’re ready to serve.

And there’s a bonus – the oil and herbs left in the slow cooker make a delicious piping hot herby, peppery jus. 

Slow cooker herbed potatoes

Prep: 10 mins | Cook: 1 -3 hours | Serves: 2 – 3


25 mls olive oil

4 medium potatoes, quartered

1 tspn dried oregano

1 tspn dried rosemary

Salt and freshly ground black pepper to taste


Turn slow cooker to HIGH.

Pour oil into slow cooker.

Peel (or leave the skin on if you prefer) and quarter potatoes, place them into slow cooker and toss in oil.  Use a spoon, not your hands, because the sides of the slow cooker can get very hot.

Add herbs and seasoning.

Stir through.

Cook on HIGH for 1 – 1.5 hours or LOW for 2-3 hours, until tender.

To serve

Use tongs to carefully  lift the potatoes onto serving dishes.

Pour over them the jus left in the slow cooker.
