Stroganoff Three Ways

As my love affair with food that involves carbs and creamy sauces unashamedly continues, here’s another flexitarian recipe –  Stroganoff Three Ways.  Based on the 1970s icon Beef Stroganoff,  my mushroom stroganoff is easily turned into a traditional stroganoff by adding rump/fillet beef or chicken strips when you fry the mushrooms.

For non-vegetarians

Fry the beef/chicken strips separately and pour the stroganoff  sauce over them as you would a mushroom sauce.  Read more

This recipe was adapted from “The Margaret Fulton Cookbook”, published in 1968.

For a vegetarian soup, use vegetable stock instead of the chicken stock in the recipe.

Timesaving tips:

  • Use garlic paste instead of crushing garlic cloves.  It tastes the same with no mess or cleanup.
  • Use ready peeled and chopped pumpkin pieces available from supermarkets

Tuna Casserole

Prep:  10 min | Cook: 25 min | Serves: 4

Take a can of  tuna in springwater,  drain and mix  with al dente macaroni, a can of cream of mushroom soup and frozen peas, top with grated cheese and bake to perfection.

Serve with salad, garlic bread etc.

I make this far too often. It’s a weeknight legend.
