Tomato and mushroom flan

This recipe is based on a Pampas Pastry recipe that I’ve had for years.  If you make too much filling for the pie case, you can refrigerate it for a day or two and use it in an omelette.  It’s good for lunch, supper or dinner and only takes 10 mins to prep. 


Tomato and mushroom flan

Prep time:  10 mins | Cook time:  30 mins | Serves: 4

Ingredients

1 Pampas Pastry savoury flan case
2 cups sliced mushrooms
1 large tomato, sliced
1 onion, diced
ground black pepper
2 free range eggs
1 cup tasty cheese, shredded

 Method

Preheat oven to 190-200 degrees.
Place mushrooms, tomato and onion in flan case.
Season with black pepper.
Crack eggs over filling.
Sprinkle cheese over top.
Bake for 25-20 minutes.

Serve immediately, accompanied by a green salad and potato wedges.
